Chocolate Peanut Butter and Banana Ice Cream Cups.
Makes 24 mini cups.

Ingredients:
3 cups of Chocolate Chips (semi-sweet, milk or dark)
3 TBSP of Butter

1/2 cup of Vanilla Ice Cream
1/2 cup of Peanut Butter
1 Banana - thinly sliced into 24 pieces

Sprinkles (optional)

Directions:
In a microwave safe bowl, melt 1 1/2 cups of chocolate chips with 1 1/2 TBSP of butter - heat for 1 minute and stir. If needed, heat in 10 second intervals, stirring in between each one until the chocolate chips are melted, do not over heat.

Using a spoon, fill the bottom of each mini muffin with chocolate and press up against the sides so that the entire area of each mini muffin is covered with a layer of thin chocolate.

In each mini muffin, dollop in a small teaspoon of vanilla ice cream.

Top each ice cream dollop with a small teaspoon of peanut butter.

Then place a thin sliced banana on top of the peanut butter.

In a microwave safe bowl, melt the remainder of the chocolate chips and butter - heat for 1 minute and stirring. If needed, heat in 10 second intervals, stirring between each one until the chocolate chips are melted, do not over heat.

Spread another thin layer of chocolate over the banana to close the cup.

Add sprinkles.

Place in the freezer until it is set (about 2 hours).

Store in the freezer.
